Granted that padmin can't do this, but is there any reason why one couldn't create a volume group on one's vios, say with a mirror of three disks, then use striped logical partitions to make the virtual scsi disks for the clients? If I understand things right, this should improve the disk i/o on the virtual disk, which would be a good thing, right?

Nothing wrong with a striped logical volume as a VSCSI device. However, never mirror logical volumes configured as VSCSI devices. This can lead to data corruption since the LPAR doesn't enforce data consistency between mirror devices and neither does the VIO server because its not a client/server I/O relationship.
